My husband (affectionately called HubbaHubba since he decided that going by Hubbs was too boring…) has never really appreciated spaghetti night in our house. He claims spaghetti isn’t a full meal, if there is meat in the sauce, it is too little to count…
So, yesterday I started tweaking and playing in the kitchen and I hit upon a spaghetti combination he likes (aside from the rattatoille I make). Here’s the recipe, it’s so simple and takes very little time to prepare, yet is nice enough for company (my kind of meal).
What you need (you can make enough for your family, I didn’t measure, but will give you the proportions we used. It fed one husband who didn’t take his lunch break and was starving, two young children, me, and had a good sized plate of leftovers for HubbaHubba’s lunch today at work)
7 breaded chicken patties (or use unbreaded boneless skinless breasts), defrosted
1 lb cooked spaghetti, drained
1 1/2 jars of your favorite spaghetti sauce
2 cups cheddar cheese
2 cups mozzarella cheese
(Or a combo of whatever cheeses you like)
Put the cooked spaghetti into the bottom of a 9 by 13 baking dish, put half the sauce on the noodles, then half the cheese. Nestle the chicken on top and put the remaining cheese and sauce on. Cover, and bake at 350 for an hour or until the chicken is cooked through.
Great served with a huge crisp side salad and crusty french bread.
